Ancient Wine Caves Found
Atskuri, Georgia:
Wine cellars and the remains of an irrigation system dating back to 14th-16th centuries have been found in southern Georgia’s Atskuri village during gas pipeline construction work.
This reminds me of an article I read on the wine caves of Muldova. These caves were used for the safe storage of wine, and could house thousands and thousands of bottles. These stories should serve as a great reminder to wine drinkers new and old, that proper storage is essential to ensure wine quality and this has been understood for centuries.
That said, if you aren’t storing your wine correctly, don’t store it at all, (that includes in your mode of transport from winery to home). No, the Refrigerator is not a good alternative, the kitchen countertop is not a cute spot, and your hall closet probably gets to warm to store wine properly. My recommendation is in the ground, i.e. a crawl space or basement, and if you don’t have one, by a Refrigerated Cellar. Take a tip from the ancient Georgians.
